Clay Pot Cooking

Nutritious, delicious, fast and easy, with minimal cleanup. What more can you ask for?

Let me introduce you to RÖMERTOPF. That's the word in clay pot cooking. If you guys don't have one of these, let me tell you, they're great and well worth the purchase price. They're not that expensive. I think the largest one is like $70.

If you don't get this brand, be sure the one you get is NOT glazed on the inside. I've seen types like that and that's just stupid. This defeats the whole purpose. The porous, unglazed surface retains water, releasing it to keep the food moist during cooking. Google Romertopf and read about it. You can also order them online or get them at most department stores or epicurean shops like Williams-Sonoma.

These clay cooking pots make the best roasts I've ever had. I have one of the huge ones. Not only does the food come out delicious, but preparation time is minimal. This is ideal for busy mothers or lazy single guys/gals like me.

Here's some info from the Romertopf site:

Clay pot cooking is an easy, efficient, healthy cooking method that seals in nutrients and cuts down on the need for added fats. Simply by soaking the Romertopf roaster in water before placing it inside the oven allows it to create and maintain moisture that cooks recipes to perfection, while preventing the nutrients from escaping.

Romertopf cooking not only saves nutrients, but also saves time. Simply soak the Romertopf in water for 5-10 minutes, place ingredients inside and place the whole pot in a cold oven set at 400-450 degrees. Then just walk away. Workout with your favorite celebrity, play with the kids, or soak in the tub for the 45 minutes to an hour the Romertopf needs to cook your meal to perfection.

Romertopf clay pots are available in a variety of sizes, ranging from the smallest which holds 2-5 lbs to the Maxi, which holds a 17 lb Turkey. They are unglazed to ensure perfect absorption, so that ample moisture is available in the cooking cavity.

There are many recipes for the Romertopf available online and you usually get a little cookbook with your purchase. Here's the basic roast recipe that I normally make.

While your Romertopf is soaking in cold water, you get everything ready. I soak mine for 20 minutes, not the 5-10 minutes recommended. That's about how long it takes to prepare everything anyway. You can't oversoak it. And don't preheat the oven. The Romertopf will crack if exposed to extreme temps suddenly. After you take it out of the oven, do not place it on a cold surface. I put in on the stove top burners.

Vegetables - any or all of the following:
  1. Onions
  2. Tomatoes
  3. Red and/or green bell peppers
  4. Potatoes
  5. Carrots
  6. Mushrooms
  7. Eggplant
  8. Zucchini
  9. A few garlic cloves - peeled and crushed
  10. Any other veggies you care to put in there like green beans, Brussel sprouts, turnips, yams - they all turn out delicious in there and everyone can select the ones they like. I love veggies so I'll throw everything in and have a veggie orgy.
Meat - one of the following
  1. Turkey breast
  2. A whole pork tenderloin
  3. Any cut of beef for roasting
  4. A chicken
  5. Small boneless leg of lamb
  6. Whole Cornish game hens
  7. Any other cut of meat you can think of that will fit in there. You may want to quickly brown the meat slightly on all sides first, in a pan. I will do that with the pork tenderloin.
Spices
  1. Salt
  2. Black pepper
  3. Oregano
  4. Turmeric - or any other spice you like
  5. Olive oil
Wash and cut up the vegetables into large pieces or not at all if they're small like the mushrooms. I slice the eggplant into rounds. Not having to chop or dice saves a lot of time.

I place the eggplant rounds on the bottom, the tomatoes on top of them. You can place the meat on top of some of the veggies, then add the remaining veggies on top of the meat and all around the sides of the meat. I usually have a huge mountain by the time it's all in there. Good thing the top is domed. It will settle and shrink after everything softens during cooking. Add the salt, pepper, oregano, a light spinkle of olive oil, turmeric and other spices as you go along putting it all together.

There really is no wrong way to do this. Once it starts going, all the flavors will blend beautifully, cooking in the meat's juices and moisture released by the clay pot.

Place in the center of the cold oven. Set the temp to 400-450 degrees as directed. Then just leave it alone for 45 minutes to an hour.

WARNING: Be very careful when you lift the lid from the pot after cooking is completed! The steam that comes out can burn you. I learned this the hard way.

You can serve the roast with a tossed salad on the side and French bread which is great for soaking up those delicious juices.

I gave a Romertopf to my sister. She has a husband, two kids, doesn't care for cooking and isn't very good at it (she called me up once to ask how to make a baked potato). Pretty ironic. She's a great wife and mother, but just hates cooking. Anyhow, she loves her Romertopf. The husband and kids do too...

Who'd A Thunk It

A while back my aunt had mentioned hearing about this new law, wondering if it was really true. I am happy to see here that it is most certainly now the law in this Great State of Texas. I forwarded this article to auntie. It will come as good news to her. She lives in the country and must often travel along very isolated roads.

It does come as quite a surprise. And to imagine that the anti-gun sheeple must be having fits makes this new law even more delish. Score one for the people! You sheeple can go shake under your covers.

I think I'll take Smitty for a ride today - show him the sights...

New law allows concealed weapons in car

04:26 PM CDT on Friday, October 26, 2007

By GARY REAVES / WFAA-TV

DALLAS - A change in state law has made it legal for just about anyone to keep a handgun nearby, and that has local prosecutors concerned.

"[I] just feel safer with it in the car," said Gail Lewis, who is getting a permit to carry a concealed gun.

But thanks to a change in state law, she doesn't need a permit to carry a gun in her car.

"We're trying to explain the good side and the bad side of that," said Tom Mannewitz, a gun shop owner.

Mannewitz said the good side is that more people will be able to protect themselves from carjackers and the like.

In the past, a person without a gun license had to be traveling across county lines to drive with a concealed weapon. Now, any law-abiding citizen can drive while armed.

So, according to the Dallas District Attorney's Office, the bad side is not having an offensive attack against would-be criminals.

"Under the old law, maybe we could catch people before they broke the law with that gun," said Assistant District Attorney John Grau. "With the current law, we have to let them go."

The new law also states a gun owner can't take the gun out of the car unless they are taking it into their home or workplace, which means more guns left in cars that may become easy target for theft.

"You could be held liable for crimes committed with it," Mannewitz said.

Mannewitz said he recommends bolting the gun down inside the car when leaving it behind.

A Sign of Life

I have wanted to post something to let those of you good people, who have been checking for a sign of life around here, know that indeed I am still among the living and remain somewhat lucid. So, I decided to post this email that I received today from a friend. That's the best I can do presently...

The few things I've heard about Ben Stein have been good in my eyes. I hope and pray that what is good in my eyes is what is good in God's eyes. I think when we nail that, we've got it made. To be on the same wavelength as God is my goal. He made reality, we fight it. I do not like fighting a losing battle nor do I like being manipulated by lesser beings, of which I include myself.

One can't be sure of the authenticity of things passed around the net, but if Mr. Stein did indeed write this, then he has my respect. It's a shame that we've reached the point in this country, in this world, where this sort of a declaration should be notable or even necessary in the first place. If the state of this country offends me, I can't imagine how our Holy God must look upon us - that is if He hasn't already turned His face away.

The following was written by Ben Stein and recited by him on CBS Sunday Morning Commentary.

My confession:

I am a Jew, and every single one of my ancestors was Jewish. And it does not bother me even a little bit when people call those beautiful lit up, bejeweled trees Christmas trees. I don't feel threatened. I don't feel discriminated against. That's what they are: Christmas trees.

It doesn't bother me a bit when people say, "Merry Christmas" to me. I don't think they are slighting me or getting ready to put me in a ghetto. In fact, I kind of like it. It shows that we are all brothers and sisters celebrating this happy time of year. It doesn't bother me at all that there is a manger scene on display at a key intersection near my beach house in Malibu . If people want a creche, it's just as fine with me as is the Menorah a few hundred yards away.

I don't like getting pushed around for being a Jew, and I don't think Christians like getting pushed around for being Christians. I think people who believe in God are sick and tired of getting pushed around, period. I have no idea where the concept came from that America is an explicitly atheist country. I can't find it in the Constitution and I don't like it being shoved down my throat.

Or maybe I can put it another way: where did the idea come from that we should worship Nick and Jessica and we aren't allowed to worship God as we understand Him? I guess that's a sign that I'm getting old, too. But there are a lot of us who are wondering where Nick and Jessica came from and where the America we knew went to.

In light of the many jokes we send to one another for a laugh, this is a little different: This is not intended to be a joke; it's not funny, it's intended to get you thinking.

Billy Graham's daughter was interviewed on the Early Show and Jane Clayson asked her "How could God let something like this happen?" (regarding Katrina) Anne Graham gave an extremely profound and insightful response.. She said, "I believe God is deeply saddened by this, just as we are, but for years we've been telling God to get out of our schools, to get out of our government and to get out of our lives. And being the gentleman He is, I believe He has calmly backed out. How can we expect God to give us His blessing and His protection if we demand He leave us alone?"

In light of recent events...terrorists attack, school shootings, etc. I think it started when Madeleine Murray O'Hare (she was murdered, her body found recently) complained she didn't want prayer in our schools, and we said OK. Then someone said you better not read the Bible in school. The Bible says thou shalt not kill, thou shalt not steal, and love your neighbor as yourself. And we said OK.

Then Dr. Benjamin Spock said we shouldn't spank our children when they misbehave because their little personalities would be warped and we might damage their self-esteem (Dr. Spock's son committed suicide). We said an expert should know what he's talking about. And we said OK.

Now we're asking ourselves why our children have no conscience, why they don't know right from wrong, and why it doesn't bother them to kill strangers, their classmates, and themselves.

Probably, if we think about it long and hard enough, we can figure it out. I think it has a great deal to do with "WE REAP WHAT WE SOW."

Funny how simple it is for people to trash God and then wonder why the world's going to hell. Funny how we believe what the newspapers say, but question what the Bible says. Funny how you can send 'jokes' through e-mail and they spread like wildfire but when you start sending messages regarding the Lord, people think twice about sharing. Funny how lewd, crude, vulgar and obscene articles pass freely through cyberspace, but public discussion of God is suppressed in the school and workplace.

Are you laughing?

Funny how when you forward this message, you will not send it to many on your address list because you're not sure what they believe, or what they will think of you for sending it.

Funny how we can be more worried about what other people think of us than what God thinks of us.

Pass it on if you think it has merit. If not then just discard it... no one will know you did. But, if you discard this thought process, don't sit back and complain about what bad shape the world is in. My Best Regards.

Honestly and respectfully,

Ben Stein

How Do You Solve a Problem Like Osama...?

Mr. Keller did a nice job with words here but they will have as much effect on that favorite son of Satan as Osama's videos have on us. They're both cheerleaders on the sidelines.

I do find it very ironic that in every threat, every communication, every attack, every condemnation of the West, every action (except cutting off heads), bin Laden and company must resort to Western technology. If it wasn't for us those ignorant ragheads would be spending most of their time picking sand fleas out of their pubic hairs.

I had plenty of math, engineering and computer science classes in which Arabs were my classmates. They are truly a stupid race. Their ONLY advantage and the reason they are a thorn in our side is their superior and innate ability to deceive, cheat and kill - the fruit of their religion, Islam - inventions of their Allah, aka Satan.

Anyhow, here is Mr. Keller's message to Osama:

I prefer the following method of dealing with Osama:

Milanesa de Pollo

That means chicken milanesa. The word milanesa has no translation but it would appear that its origin is from Milan, Italy. Argentina has a whole lot of Italian in its culture.

And that means it's recipe time again. I've got to post something here - that black bastard's picture is wearing me out. It's ingrained already! And I am hungered, so talking about food appeals to me at the moment.

The other day I grabbed up a big package of boneless, skinless chicken breasts that were on sale and they need to be cooked. I decided to make milanesas de pollo today. My days of rib eyes, tenderloin, New York strips, etc. are over for now - unless a nice fat cow happens to wander into my backyard...

Thanks to the chicken littles screeching their pinheads off about global warming, ethanol fuel is big now, causing the price of corn to skyrocket and along with it, meat, milk, cheese - every frickin thing that consumes corn along its way to the grocery stores.

If you must have ethanol fuel, it would make more sense to make it out of sugar cane, like they've been doing forever in Argentina, but what do I know. There are plenty of third world countries, like Louisiana, that grow sugar cane from where we can buy it. Don't need to use up our arable land for it. God, how I hate those fanatical, tyrannical environmentalists.

Anyway, milanesa de pollo is a typical Argentine dish. Milanesas, without the pollo part, are a different dish made out of beef, similar but a slightly different recipe. That's for another day. My friends here really like both styles of milanesas. One ex-boyfriend, who was a total meat and potatoes man, just loved the meat milanesas and learned from me how to make them. He still cooks them up for his family.

This is a very easy recipe, not fancy, but a simple, everyday way to cook up chicken.

Ingredients:
  • boneless, skinless chicken breasts or tenders.
The tenders are the most convenient as they don't need cutting to size. Don't try this with thigh meat! It will not work. Take my word for it. If you don't believe me, just try it, but don't say I didn't warn you. You'll end up with raw chicken on the inside and burnt breading on the outside. Never eat undercooked chicken. I'll eat beef blood rare, but you're asking for big trouble if you try that with chicken.
  • eggs
  • milk
  • bread crumbs
I don't buy canned bread crumbs anymore. If you read the ingredients, you'll see that they contain hydrogenated oil. Bastards. They will sneak that crap into everything. I make my own bread crumbs. It's very easy and a good use of your stale bread. Just put the stale bread into your blender, start it up and you'll see fine bread crumbs created right before your eyes. I suppose you can freeze it if you don't have any immediate need to bread crumbs.
  • salt
  • pepper
Putting it all together:

The egg bath
  1. Rinse the chicken under cold running water, dry on paper towels - remember my paper towel and newspaper trick. Pat the tops dry.
  2. Season chicken on both sides with salt and pepper
  3. Whole breast pieces that include both sides will need to be cut in half
  4. In a bowel large enough to fit all the chicken, break a few eggs.
  5. Pour a bit of milk in there. Not a cup's worth, maybe 1/4 cup for three eggs.
  6. Season with salt and pepper.
  7. Beat it all up until it's a uniform mixture.
  8. Put all the chicken in the egg mixture.
  9. You can let it sit there a while or even until much later. Just cover the bowel and put it in the fridge until you're ready to bread them.
Breading the chicken
  1. For breading, I use a large pizza pan. It has a short rim and a big surface area, making it ideal for breading stuff.
  2. I pour the bread crumbs into the pizza pan and shake the pan a bit to spread all the crumbs around.
  3. Lift a piece of chicken from the egg mixture, let the egg drip off a bit, then lay it on the bread crumbs.
  4. Cover the top of the chicken with bread crumbs.
  5. With the base of the palm of your hand, firmly pound the chicken. This serves two purposes. It flattens out the chicken and secures the bread crumbs to it.
  6. Turn it over and do the same. Be sure you lay it back down on bread crumbs when you turn it over or it will stick to the bottom of the pan.
  7. Pick up the breaded chicken and shake off the excess bread crumbs. Here's how I do that. I dangle the chicken with one hand. With my other hand I form a little wall with all my fingers, and kind of slap the chicken against it. It's hard to describe. Somehow shake off the excess bread crumbs.
  8. Lay the breaded piece on a plate. You will end up with a pile of all the flattened, breaded pieces that you can either fry right then or just cover and put in the fridge until you're ready to fry them.
Frying the chicken
  1. Add some oil to a frying pan. About a quarter inch high.
  2. Heat the oil at moderate high
  3. Carefully add the chicken to the heated oil.
  4. The sizzle you will hear should sound like a light rain, not a heavy downpour.
  5. The pieces should not be very thick, not much more than an inch thick, so it should cook up in a few minutes. You will cook them on each side for about 5 minutes.
  6. Remove from the pan, and put on paper towels to drain.
  7. You may need to change out the oil if it gets too dark.
  8. Pile them up on another plate and serve up.

I will usually accompany milanesas de pollo with mashed potatoes and a tossed salad. It is customary to squeeze a little lemon over the top, but that's up to the individual. Lemon wedges are normally placed on the platter with the milanesas.

The kids really like them, especially if you make them small, from chicken tenders. They're like chicken McNuggets and there doesn't exist a child who will not scarf those down.

I'd get started on them right now, but I have no bread crumbs. Since I don't eat bread, there's never stale bread around here from which to make bread crumbs. I'll have to make a trip to the store and see if I can find some bread crumbs without that plastic poison in it.

911, What Is Your Emergency...?

AAAAUUUUGGGGHHHHHHH! I'm an idiot who's going to die now because I don't have a gun!

I want this picture up here so it will be ingrained in my mind. How I'd love to run into this rabid piece of black shit. Well, in all honesty, I'd really prefer my cousin run into him. He's a much better shot, is very experienced at eliminating varmints and would not lose one wink of sleep over it. I, on the other hand, would be quite shaken - satisfied, but shaken. The experience of blowing a man away would reverberate around in my head and I'd probably lose some sleep. I would not want to be inconvenienced that way.

Here are some articles about this bipedal terror who remains at large in my area. The composite picture of him, shown below, was just released yesterday.

Frisco police say the man who broke into a woman's apartment could be responsible for as many as 18 other similar crimes in the Metroplex over the last two years.

Schepps Dairy is offering a $10,000 reward for information leading to the arrest and grand jury indictment of the suspect.

"This guy has proven himself to be a brutal attacker," said Frisco police Sgt. Gina McFarlin.

In Tuesday's attack, he used a sawed-off shotgun to force his way in through a sliding glass door on a first floor apartment.

He demanded the victim's purse, tied her up, sexually assaulted her, and then stabbed her.

"He has absolutely no remorse," said McFarlin. "It seems he left her for dead. At one point he checked her pulse to see if she was alive."

Police say she played dead, and when he moved into another room, she tried to make a run for it and he stabbed her again. The attacker finally left the apartment with the woman's ATM card, which he was recorded using in Southlake. However, his face was not visible.

A suspect fitting the same description is wanted for a number of violent attacks in Plano.

In November 2005, a woman was sexually assaulted and robbed gunpoint. In December 2006 it happened again, at another apartment complex.

In June 2005, a man was found dead in his apartment, from a gunshot wound to the leg.

Just a few months later in November 2005, a suspect demanded money from two men in an apartment, then forced them to withdraw money from an ATM.

The goal for police is to get the suspect before anyone else is hurt, or worse.

Frisco and Plano police have banded together to stop a serial rapist and home invader who has attacked at least 20 North Texas women in the last two years.

The latest happened in April, when a Frisco woman was sexually assaulted and stabbed several times. The victim survived and eventually was able to provide police with more details.

On Thursday they released a composite computerized sketch of the man who is in his 20s or 30s, standing about 6 feet tall and weighing about 200 pounds. Officers issued that sketch along with a Home Invasion Tipline: 972-941-2148.

According to America's Most Wanted, these are the crimes this man is connected with over the last two years:

May 20, 2005- Tonti Lakeside Apartments, Dallas
May 23, 2005- Courtyard at Knox Park Apts., Dallas
May 25, 2005- Riverchase, Coppell
May 26, 2005- Renaissance Park Apartments, Dallas
May 27, 2005- Marquis at Waterview, Richardson
May 27, 2005- Renaissance Apartments, Dallas
May 27, 2005- Churchill on the Park, Dallas
June 1, 2005- The Gables Apartments, Garland
June 2, 2005- Avendale on Preston, Plano
June 3, 2005- Sweetwater Ranch, Richardson
June 6, 2005- Jefferson Place Apartments, Irving
June 10, 2005- Wimberly Apartments, Dallas
June 14, 2005- Carlyle Apartments, Dallas
November 3, 2005- Camden Farmers Market, Dallas
November 7, 2005- La Costa Apartments, Plano
November 8, 2005- Waters Edge in Legacy, Plano
May 15, 2006- 14400 Montfort Drive, Dallas
May 17, 2006- 1121 Beachview, Dallas
April 10, 2007- 9400 Wade Blvd. Frisco

If you have any information about these crimes, call the Home Invasion Tipline: 972-941-2148.

He is known for entering through a sliding door, and is said to target women on the ground floor who leave their lights on. He then forces his way into the apartment with a shotgun, ties up the victim, and takes her money, ATM card and code.

The suspect is described as a black male, approximately 6 feet 2 inches, who sometimes wears a bandanna around his face.

One of those victims on that list lived directly across the street from my friend's condo. Her place is a two-story, with a sliding glass door on the ground floor. He could just as easily have targeted her.

If one, JUST ONE, of those women had owned a gun, this monster would very likely have been stopped dead in his tracks. But every single one of them owned a TELEPHONE! You know - our lifeline - that indispensable weapon on which most people rely to guard their very lives. A lot of freaking good it did them!

But, but if we had tougher gun laws this black bastard wouldn't have a gun! YES, HE WOULD! His sawed-off shotgun is not legal, it's not registered, and there's no single law or a million laws that will prevent him from getting his murderous hands on one!

If, after the nightmare these people endured in their own homes at the hands of one predator, every single one of them, their families and friends don't become a gun owner and pro-gun advocate, then they're not only victims, they are also enablers.

You know, if one were to view 911 as a weapon against crime prevention, the statistics would probably prove that it creates more victims than guns do. 911 doesn't prevent crimes, it allows crimes to happen. People who rely on 911 for their safety are not only setting themselves up to be victimized, but are also almost insuring the criminal will go on to victimize another person.

Let's see how effective this 911-type "weapon" would be for the criminal. He comes in, no gun, no weapon of any kind, no threat at all to you. He gets his cellphone out and calls his fellow criminals to hurry over with their guns so they can commit the crime against you. And then he just sits there and waits. Yeah, that's how ridiculous it is for you to use 911 as your weapon of choice against crime.

Treasonous Bastards in Black Robes

Judge Patrick McAnany,
Public Enemy #1
Excerpt from WND:
Court rules: Illegal aliens not really 'illegal'

An appeals court has concluded that just being an illegal alien in the United States doesn't necessarily violate the law, so a judge cannot deny probation and require a jail sentence for a convicted drug dealer who is an illegal alien.

The opinion from the Kansas Court of Appeals came in the Barton County case involving convicted drug dealer Nicholas L. Martinez.

The ruling found that while the laws of the United States make it illegal to enter the United States without authorization, being in the United States after entering illegally is "not necessarily a crime."

Was there any doubt this bastard, Patrick McAnany, was appointed by a Democrat? Of course, it was Governor of Kansas, Kathleen Sebelius. Is there any doubt this opinion is beyond ridiculous and treasonous? The question is how are we going to stop these appointed, unaccountable traitors who continue to subvert the will of the people?

I want Patrick McAnany and every single filthy judge who rule for nonexistent rights of illegal aliens and against the people who want to protect themselves from these criminals impeached. There clearly exists an agenda here and it is being forced on the people against their will. When 20 million criminals are protected by our own justice system, the system is well past being broken, it is now a tool for tyranny. It is not bloody likely these bastards will be impeached by the very system that put them there. Whatever shall we do...?
